National S’mores Day

August 10th is National S’mores Day, and we all know that s’mores is one of our favorite camp snacks! It’s unclear who actually invented this graham cracker sandwich, but we can take a moment to thank the anonymous creator of this ooey-gooey and delicious campfire treat. One of the first publication of a s’more recipe—short for “some more”—was seen in 1927 in Tramping and Trailing with the Girl Scouts, and credit was given to Loretta Scott Crew. She often made them for the Girl Scouts, so let’s send a little thank you her way too!

If you don’t have access to a campfire, there is no need to miss out. There are tons of recipes for s’mores using an oven, as well as some spinoff recipes. Here are some of my favorites below that have been a hit with my kids!

Indoor S’mores

These classic chocolate-y, marshmallow-y treats are great for rainy days!

Ingredients:

  • 8 whole Honey Maid Graham Crackers (Plain), broken in halves

  • (2) 1.55oz Hershey’s Milk Chocolate Bars, broken in quarters (three squares)

  • 8 large Jet-Puffed Marshmallows

Serving size – 1 s’more (1 Honey Maid graham cracker sheet, 3 Hershey’s squares, and 1 large Jet-Puffed Marshmallow)

Carbs per serving size – 24g

Directions:

  1. Preheat oven to 400° F
  2. Lay 1/2 of the graham crackers on a cookie sheet. Top with chocolate pieces to cover. Use kitchen scissors to snip the marshmallows in 1/2 horizontally if using miniature crackers and place 1/2 a marshmallow on top of each graham cracker. If using regular size crackers use a whole marshmallow.
  3. Bake until the marshmallows are puffed and golden brown, about 3 to 5 minutes. Remove from the oven and top with the remaining graham crackers, pressing down slightly to make a sandwich. Serve immediately, while still warm.

Swap the chocolate bar out for cookie butter…yum!

Make a Samoa by adding toasted coconuts. If Girl Scout Samoa cookies are your favorite, this one’s for you!

If you like Mexican hot chocolate, try adding a sprinkle of cinnamon and chili powder to spice things up!

S’mores Dip

This one is a Netflix movie night favorite!

Ingredients:

  • 4 oz of semisweet chocolate chips
  • ½ c heavy cream
  • 2 Tbsp unsalted butter
  • Dash of salt
  • Heaping cup of mini marshmallows (or large marshmallows enough to cover chocolate)
  • Graham cracker or pretzels for dipping

Directions:

  1. Combine the chocolate chips, heavy cream, corn syrup, butter and 1/8 teaspoon salt in an 8-inch cast iron skillet (see Cook’s Note). Put over medium heat. Stir periodically as the mixture comes to a gentle simmer. Simmer for 6 minutes, stirring frequently, until the sauce is smooth and slightly thickened. Turn down the heat if the sauce comes to a full boil. Remove from the heat and let cool at least 15 minutes.
  2. Preheat the broiler.
  3. Cover the fudge sauce with a single dense layer of marshmallows. Place under the broiler and broil until the marshmallows are toasty brown, 2 to 3 minutes (watch carefully as they may brown more quickly depending on your broiler.) Serve right away with dippers.
